Instructions
- Rub the dried rosemary between your palms before it goes in. The oil sits inside the needle, and breaking the needle open is what sends the smell into the water instead of leaving it in the jar.
- Drop the lemon slice in whole, skin and all. The flesh brings the sourness and the skin brings the oil, and a slice cut any smaller just disintegrates into the cup.
- Pour the boiling water over both and steep for five minutes, tasting from three. Rosemary keeps releasing resin for as long as it sits, and past about eight minutes it turns from herbal to medicinal.
- Strain it out rather than leaving the rosemary in for a second cup. The needles float, and there is no graceful way to meet one.
- Keep the rosemary whole in a jar until the day you use it and it holds its scent for a year. Crushed and then stored it will be flat within a couple of months, because the oil has nowhere left to hide.
