Ingredients
- 2 cups milk
- 1/2 cup dehydrated banana chips
- 1/4 cup dehydrated sliced strawberries
- 1/4 cup plain yogurt
- 1 tablespoon sugar
- 5 ice cubes
Instructions
- This one uses whole dried pieces rather than powder, so the fruit needs a head start. Cover the chips and slices with the milk and leave them ten minutes before the blender is switched on.
- Check the packet on the banana chips. Many are fried rather than dried, and a fried chip brings oil into the jug that leaves a film on the glass and on your teeth.
- Blend the soaked fruit and milk until you cannot see a speck of red or white. Strawberry slices are fibrous and a half-blended one shows up as a gritty thread.
- Fold the yoghurt in at the end on the lowest speed. Overworked yoghurt goes thin and grainy, which is the opposite of what it was added for.
- Hold the sugar back until you have tasted it. Dried fruit is concentrated and the milk brings sweetness of its own, so the spoonful in the list is a maximum rather than a requirement.
- Add the ice last and pulse only enough to break it up. Drink it while the ice is still in pieces — the texture here comes from the chill, and a melted one tastes flat.
